How to prepare Koose (Akara) by AdomHomeCooking.
2 cups black eye beans
2 large eggs
1 Soak the beans for about 5 hours
2 Pour into the blender
3 Add a little water just to be able to blend
4 Blend half of the beans
5 Add the rest gradually to get a think paste
6 Add the onion (and pepper optional)
7 Pour out the pasty beans
8 Cack the eggs into a separate bowl and add tot eh paste.
9 Add salt to taste
10 Mix together
11 Heat up the oil for deep frying till very hot
12 Use a ladle or spoon to scoop he paste into the hot oil
12a At a good temperature, the paste pops up to the surface of the oil -floats
13 Keep turning till golden brown
14 Remove and allow excess oil to strain off.
15 Repeat process till all pastes is used up.
Serve with hausa koko, corn porridge etc.
