Ekoagbemi is normally a breakfast meal in Ghana. Made from dried corn with the skin and the embryo removed. It is very similar to Jamaica’s hominy corn porridge.
Very lovely when eaten with roasted peanut.
Dried corn kernel
Wash the kernel and boil for about an hour or until the corn is soft to chew
Add a pinch of salt
Add sugar to taste.
Add milk and peanut as preferred
