How To prepare mpoto mpoto. Enjoy.
Ingredients:
Diced coco yam /yam
Dried fish
2 Tomatoes
Onions
Garlic
Pepper
Ginger
Palm oil
Salt
Season of choice
Method:
1 Peel the coco yam and cut into small pieces.
2 Wash thoroughly
3 Put the coco yam in the pan , add water and boil
4 Add the dried fish
5 Add the whole pepper, add the season and salt to taste.
6 Blend the tomatoes,pepper and all the spices.
7 Add the blended vegetables to the soup.
8 Allow to cook for about 20 min, leaving the saucepan uncovered.
9 Taste for salt
10 turn off the fire, scoop some of the soup into a separate bowl.
11 Use your potato masher to mash the coco yam in the pan (its a one pot meal)
12 Heat your palm oil or cooking oil add a little chopped onion for flavour and pour them into the mashed coco yam.
13 Mix well, and allow to simmer for a couple of minutes.
14 Serve the mashed coco yam with the saved soup aside.
This is a heavy meal and can eaten by it self, very good for afternoon meal.
