1/2 Medium Yam
Black / White pepper
Flour &/ Bread Crumbs
2 teaspoons evaporated milk
1 peel the yam
2 Cut them into small chops
3 Boil in a salted water till soft
4 Add butter
5 mash the yam with potato masher
6 Add 2 teaspoon evaporated/fresh milk
7 Add white/black pepper (optional)
8 Add 2 egg yolks
9 Allow to cool.
10 Spread some flour on the working board
11 Take some of the mashed yam and mould into shape, using the flour to cover the ball to firm it up.
12 Repeat till all done
13 Dip the balls into the egg white
14 Deep fry in the cooking oil
15 Ready when golden brown.
16 Remove and allow drain.
17 Serve with gravy and salad.
