Ingredients:

Diced potato
Spring onion
Parsley
2 large eggs (boiled)
Salt
Mayonnaise
white /black pepper

Method:

1 Peel the potatoes and dice them
2 Wash well and boil in salted boiling water
3 Allow to cook not too soft
4 Chop the onion and cut out the spring onion and parsley
5 Remove the potato from the fire and blanch it in cold water
6 Allow to cool
7 Add 2 TB spoon of mayonnaise
8 Add chopped hard boiled egg
9 Add the chopped spring onions and a few drops of the white/black pepper
10 Mix gently so the potato does not go mushy
11 Garnish with the chopped parsley
12 Keep refrigerated and serve within 3 days.
