Here, El shows how cocoyam is preserved in the freezer for Nuhu/ nkyimho, (cocyam porridge, much like a casserole dish).

Ingredients:
• Cocoyam
Method:
1. Wash and peel the cocoyam.
2. Peel them all up nicely
3. Using the larger part of your grater, cut the cocoyam up into small pieces. You can use you knife here if preferred.
4. Put the cut cocoyam into a food bag and freeze till ready to use.
5. Must be cooked from frozen. Can be allowed to tour just a little bit though.
